T he Caseificio Coop La Contadina in Grazzanise, in the province of Caserta, specialises in the production of 'mozzarella di bufala campana PDO' (buffalo mozzarella from Campania with protected designation of origin status). In addition to the range of mozzarella, buffalo ricotta is also produced. "In particular, we make ricotta 'gentile', available in packs of 300 grams, 1 kg for shops and 5 kg industrial-sized packs. On the other hand, the 300 gram pack, hand-wrapped and placed in a transparent tray, is designed to take away", says Giovanni Boncompagni, sales manager for Caseificio Coop La Contadina. "The best-selling product from this segment is actually the 300 gram ricotta which, unlike mozzarella, suffers less from seasonality". According to Boncompagni, the company's most-produced ricotta is so successful abroad because of its evidently hand-crafted characteristics. "Today, we export this product to Singapore, France, the Netherlands and Switzerland," explains the sales manager. Finally, new products. The company is preparing a new product for 2014.
